Pumpkinpie (dessert, 8 persons (Chris))
To prepare the pumpkin, peel it, get rid of the seeds, cut it uo in
1-inch or so cubes, put it into a saucepan with a little water, cover
the pan and simmer it for 20-30 minutes or so until it is nice and soft,
then mash it. Be careful that the water doesn't all boil away because it
will burn pretty easily, but don't add to much water because then it
gets runny and won't make a nice pie.
Alternatively you could bake the pumpkin: cut it in halves or quarters or so,
take out the seeds and gunk, put it in a baking pan and bake at 350 F
(180 degrees C) for about an hour to an hour an a half, until it's soft.
Then scoop it out of the shell and mash it up. This way is better for pies,
it stays thicker.
Preheat the oven to 220 degrees C.
Place a cup ofthe cooked pumpkin i a bowl and thin with half the milk.
Mix in lightly beaten eggs. Mix spices with sugar and flour thoroughly stir
these into the pumpkin-milk-egg mixture. Add enough of the remaining milk to
reduce to a batter-like mixture. Pour into the pie shell and bake in hot
oven (about 220 degrees C) for 15 minutes (this bakes the crust), then reduce
heat to 180 degrees C and bake about 45 minutes longer or until filling is
cooked. (Filling is cooked when a knife inserted in the center of the pie comes
out clean)
