Strawberry white chocolate Napoleons (pastry, 16 persons (Jim Panetta))
Thaw pastry overnight in fridge. Unfold on pastryboard, sprinkle
lightly with sugar and roll out slightly. Cut each sheat in 12 and
bake them 15 min. at 400 degrees Fahrenheit. Split each piece in two
horizontally.
Melt the chocolate with the water over double boiler until smooth.
Let the mixture cool 10 min. Blend the sour cream and lemon juice in large
bowl. Beat the whipping cream until stiff peaks form. Blend cooled
chocolate with sour cream mixture. Fold in whipped cream in 3 additions.
Refrigerate 1-2 hours or til set.
Reserve 16 nice strawberries for tops. Slice most of the rest.
Reserve 16 nice tops of pastery. Turn the remaining 32 pieces hard side
down and add about 2 spoons of mousse to each. Layout several strawberry
slices on the mouse. Put another spoon or so of mouse on the strawberries.
Assemble Napoleons, making sure that the bottom piece is flat.
Put the tops on and add about 1 spoon of mouse in the center of the tops.
Place one nice strawberry on top of the assembled pastry.
